Love these Homemade Italian Rainbow Cookies || Holiday Sweaters From Walmart

Italian Rainbow Cookies have always been my favorite cookie! I remember as a child thinking they were just so pretty to eat. I also remember always hearing what a nightmare they were to make with too many steps and too many ingredients. No more slaving away for hours making these cookies! This is the simplest recipe and the texture and flavor are just the same. Enjoy!
Ingredients
Nonstick cooking spray 3 cups sugar 3 sticks unsalted butter 9 eggs 3 tbs almond extract 3 cups all-purpose flour Red food coloring (to color liking) Green food coloring (to color liking) 1 cup raspberry jam, divided into two 1½ cups semisweet chocolate chips Chocolate sprinkles
Directions
-In a large bowl, mix butter, sugar, and almond extract to a smooth consistency. Gradually add in the eggs. Add in the flour and blend well. Separate the batter equally into three bowls. Add the desired level of red food coloring to one bowl and stir evenly, green to another, and leave the last one as is. -Keeping the batters separate, evenly spread them into the greased and parchment-lined 13.25 x 9.25-inch baking sheet pans, and bake at 325°, rotating halfway through, until set, 10 to 12 minutes. Then let cool completely. -Once cooled, spread half of the jam over the top of the green layer. Stack the white later on top of the green. Spread remaining jam over the top of the white layer. Stack the pink layer on top of the white and evenly spread melted chocolate over the top. Add chocolate sprinkle and refrigerate until set, 30 minutes. -Once set, trim the edges of the cake, reserving all trimmings for snacking. Cut the cake into 1½-inch squares, then serve.
What’s Christmas baking if you’re not in festive clothing?!? HA! When I stopped into our local Walmart and saw these holiday sweaters, I had to snag them up as gifts for our holiday baking day! Literally so cozy and soft and super impressed with the quality. And no joke, the fact that I got my brother to get in on our shenanigans is a gift in itself! Can’t wait for my precious niece, Aria, to grow up and be alongside baking away with us!
